Dirty Rice

Ingredients:
-1 pound ground meat, I usually use beef
-1 tablespoon of bacon grease, optional but adds lots of flavor
-1 onion, chopped
-1-2 bell peppers, green or red
-Fresh garlic or garlic powder to taste
-1 can of beans, I usually use red beans or black beans
-1 can of chopped tomatoes, or fresh chopped tomatoes
-1 cup uncooked white rice
-1.5 cups broth, I usually use chicken or beef
-1 teaspoon salt
-0.5 teaspoon black pepper
-1 teaspoon of Tony Chachere Creole seasoning (I can only find it at price chopper and sometimes Topps)*NEW: Found at Wegmans!
-0.25 to 0.5 teaspoon cayenne pepper

Directions:
Melt the bacon grease in a large skillet. Add the ground beef and onions and cook until the beef is browned. Drain and discard the excess grease. Add the remaining ingredients and stir. Bring to a boil, then reduce heat to a simmer and cover. Let it simmer, covered, for 16 minutes. Fight the urge to take the lid off or the rice might not cook properly. After 16 minutes, remove from heat and let sit covered for another 10 minutes so the rice can finish cooking. Again, fight the urge to take the lid off at all. There you have it! Enjoy!

NOTE: The 16 minutes cook time works for white rice, if you use a different kind of rice you will have to adjust the cook time. ANOTHER NOTE: Feel free to use what you have on hand and switch up the ingredients!
