Potato Bean and Kale Soup

Ingredients:

-4 to 5 potatoes, cubed
-1 can of cannellini beans, drained
-1 can chick peas, drained
-1 onion, chopped
-Minced garlic
-A few handfuls of chopped kale
-5-6 cups or so chicken broth (or vegetable broth or other)
-Kielbasa sausage cut into bite size pieces (optional)
-1 tablespoon or so of olive oil
-1-2 teaspoons of Italian sesoning
-Salt and pepper to taste (start with a teaspoon or so of each)

Directions:

Heat olive oil in a stock pot and cook onions and garlic until onions are translucent. Next add chicken stock, potatoes, Italian seasoning, salt & pepper; bring to a boil and simmer for about 10 minutes. Then add beans and kielbasa and cook for another 10-15 minutes until potatoes are soft. Next add a few handfulls of chopped kale and simmer for an additonal 5 minutes. You can cook until the kale is tender to your liking. ENJOY!
